Vegetarian Skillet Lasagna (Serves 4)
Problem: 1- Simple
Preparation Time: 10 minutes
Cooking Time: 30 minutes

6 San Remo Conventional Lasagna sheets
Four tbsp olive oil
1 onion
2 garlic cloves
1 medium eggplant, reduce into 1cm cubes
1/Four cup purple cut up lentils
1 tinned tomato
1 bay leaf
12 child bocconcini
100g mozzarella
20g parmesan
basil for garnish
sea salt & cracked black pepper

1. Warmth skillet over excessive warmth and, cooking in batches, add 1 tbsp olive oil and cook dinner eggplant till browned. Put aside.
2. Add onion and sauté till softened.
3. Add garlic, cook dinner for 1 minute after which add lentils, stir.
4. Add tinned tomato, 1 can water and bay leaf.
5. Carry to the boil, season with salt & pepper, flip down warmth, simmer till lentils are cooked, about 20 minutes.
6. Add damaged lasagna sheets, cook dinner till tender, about 10 minutes.
7. Add the infant bocconcini and press them in to submerge.
8. High with mozzarella and parmesan and place underneath a grill till melted and golden.
9. Garnish with basil and cracked black pepper.
