I'm loving this channel. You're so fun. I find that binding/texture is the hardest part of egg substitution. Your findings correspond to my experience. I'm always surprised at how well flax meal works, particularly in quick breads. One substitute that you don't hear about much but that people swear by is chickpea flour and water in a 50/50 ratio. I would think that would be good for both binding and color but I've never tried it. Rather use my chickpea flour in socca, because it's divine. I'm tempted to do a taste test like this with a smaller list of ingredients and maybe some hybrids.
Wondering about vinegar and baking soda/powder? Also, they have golden flax seed meal.
Here is a tip. Use golden flaxseeds for light colored baked goods. Brown flaxseeds are great for darker colored baked goods.

You should try apple cider vinegar as well. Works great!
I still dont understand why vegans dont have their own hens, take good care of them and just have eggs. Its cruelty free, which is one of the reasons of veganism, is sustainable, you make sure the quality is there, and an egg is basically the hen's period, is a waste.

I was thinking maybe it’s because each substitute require different baking time? Like maybe the more liquidy needs more baking time than the thick mixes
And maybe the applesauce and banana requires longer baking time too? Maybe the timing will affect the crumbling since you put them all at the same time even though they are all different? I could be wrong tho

I always whip the aquafaba to give it body, and it normally holds pretty well, but I wonder how it would hold if I used a half flax half whip combo, hmm, just a thought
I've found it works out better to just use a vegan recipe versus trying to substitute things. Isa Chandra has the best vegan recipes. Check out her cookbooks and website.

Can you make vegan gyros next?
I've tried everything except the aquafaba. Different substitutes simply work for different things. Carbonated water works wonders in a cake from scratch and its my go to sub. I also like applesauce A LOT, but i usually use less oil than the recipe requires in that case. I only use banana if i want something thats banana flavored. In my opinion cake mixes aren't good for vegan substitutes and you would have gotten different results if you had done like pancakes with these subs instead.
