Scrumptious vegan Caribbean Rum Cake! Be happy to high with traditional icing or not! This was a closely requested video so i hope you guys take pleasure in in time for the Christmas season! I am fairly certain this recipe is ok to be tailored with plant-based milk for these that don’t devour alcohol 🙂

Recipe

Macerated Fruit combination
200g dates, pitted
1kg combined dried citrus peel, raisins, cranberries currants
Soaking
Wrey and Nephews
Pink Lable Pink Wine
Darkish Rum

Cake batter
500g vegan butter room temp
2-Four tbsp browning
1 half of cup brown sugar (1 cup is sufficient for my sweetness ranges)
113g unsweetened applesauce
Zest of 1 orange
1 tsp vanilla exract
three cups of macerated fruit combination
300g all-purpose flour
2 tsp baking powder
2 tsp baking soda
2 tbsp lemon juice
1 half of tsp floor cinnamon
half of tsp floor nutmeg
1 tsp floor allspice

This combination break up into two muffins for me. Cooked for 90 minutes 150 levels c. Stick a knife by till it comes out clear to verify its prepared. .
